This weekend truly kicks off summer...and you'll want to stay cool with fresh salads, made with the best of the season's produce. Below is my current go-to fruit salad for summer picnics and the Fourth of July. You can find that cute little star fruit cutter (along with some other fun shapes you can use throughout the year) in the “Whisk & Toss” section of my Amazon storefront. I have also included the recipe for the latest teriyaki salmon salad with the beloved crispy rice croutons. Can’t find Sriracha? Me either. Teriyaki Salmon with Crispy Rice Croutons |

INGREDIENTS Whisk Toss 1 lb. Salmon cut into 1 1/2 inch cubes 2 tablespoons teriyaki sauce 4 cups prepared sushi rice 1/4 cup mirin (or rice vinegar with 2 tablespoons sugar) 1 tablespoon olive oil or avocado oil cooking spray 1 1/2 cups diced english cucumber 1 cup diced avocado (1 large) 1/2 cup chopped scallions greens and whites 1/3 cup diced watermelon radish or daikon radish in 1/4 inch cubes 1 red bell pepper cut into 1 inch matchsticks 1 sliced sautéed jalapeño 2 tablespoons Furikake
INSTRUCTIONS In a mixing bowl add prepared sushi rice and mirin, combine until evenly distributed. On a parchment line 1/4 baking sheet add rice mixture and flatten out evenly to 3/4 to 1 inch thickness. Place another sheet of parchment and baking sheet on top and place in the freezer for at least an hour. Preheat the oven to 425 Fahrenheit. Remove rice from freezer and cut into 1 inch cubes, distribute evenly on a parchment lined full size baking sheet and spray or brush with oil. Bake for 25-30 minutes or until edges start to brown. Marinade salmon cubes in teriyaki for 20 minutes in the refrigerator. Preheat the oven to 425 degrees Fahrenheit and bake on parchment lined baking sheet for 7-10 minutes or until cooked to your desired temperature. In a large salad bowl (use SALADLAB at checkout for 10% off) combine mayo, sriracha, honey, sesame oil and sesame seeds, whisk until well combined. In the same bowl add cabbage, lettuce, salmon, rice croutons, cucumber, avocado, bell pepper, jalapeños and Furikake. Toss until well combined. Enjoy!

Independence Day Fruit Salad |

INGREDIENTS Whisk 1/3 cup orange juice 2 1/2 tablespoons honey white balsamic vinegar (or regular white or red balsamic vinegar) 1 teaspoon orange zest ¼ cup honey or sweetener of choice 2 tablespoons of finely minced basil Flake sea salt to taste
Toss 5 cups watermelon 1x2 inch sticks 3 cups Red apples cut in matchsticks 1 teaspoon powdered citric acid 6 cups of water 1 cup raspberries 2 cups blueberries 2 cups sliced strawberries 1 cup Dragon optional cut fruit stars, you can sub white peaches or white strawberries 1 cup Mini mozzarella balls
INSTRUCTIONS In a large salad bowl (use SALADLAB at checkout for 10% off) combine orange juice, vinegar, orange zest, honey, basil and salt. Whisk until well combined and set aside. Fill a new bowl with 6 cups of water and add citric acid (a couple tablespoons of lemon juice works too) and whisk until dissolved. Add apple matchsticks to the water/acid mixture as you prepare them so they do not brown and let sit for a few minutes. In the same salad bowl with the dressing add watermelon, apples, strawberries, raspberries, blueberries, dragon fruit and mozzarella. Gently toss until everything is evenly coated and serve. Enjoy!
