Happy Valentines Day week! Usually I put a cover photo of our product but this month is an exception :) Despite everyone being a bit more low-key than usual, I'd like to feel love is still in the air. It comes in all shapes and forms. For me, I look forward to spending this upcoming weekend with a few days off because my birthday happens to be on Valentines as well!

 

Therefore, I fully intend to spend it with good food (i.e. sweets!), good friends (via Zoom), good shows (thank you, Netflix), and my Valentine, Hunter! I hope you all take the time to celebrate it too!

Oh the irony; making brown butter may burn easily, but in actuality, brown butter also has one of the highest smoke points, which makes it ideal to use as a cooking oil. At this point, the milk solids in our Brown Butter Cubes have been cooled as well so it doesn't burn as easily (in case you were wondering).

 

For those that need a refresher, smoke point is the temperature that a fat can be heated to before it starts to smoke and burn. To put in perspective, brown butter naturally has a higher smoke point of approximately 450-degree Fahrenheit, whereas canola and corn oil ranges from 400-450, and butter only at 350. So with our brown butter, stir-fry, baste, and sauté to your hearts content!

ROASTED ASPARAGUS WITH BROWN BUTTER

We are in love with this photo! It's always special when a side dish can look like the main entree. We love working with Liny and are so lucky she's an excellent cook and baker. Check out her recipe for the asparagus below and be sure to check out her amazing photos here!

 

 

INGREDIENTS

 

•    4-5 Hunter Browns’ Brown Butter Cubes
•    1 bunch Asparagus 
•    5-6 cloves Garlic
•    Few sprigs of Thyme (or rosemary, if preferred) 
•    Handful of walnuts (chopped) 
•    Coarse Pepper
•    Sea salt (to taste) 
•    Parmesan (optional) 

 

 

DIRECTIONS

 

  1. Preheat the oven to 420 F /230 C. 
  2. Cut the bottom hard bits of the asparagus, line the asparagus on a baking sheet (I used a quarter sheet). 
  3. Add few cloves of garlic, you can also chop it up or use garlic bits. 
  4. Add the walnuts and the sprigs of thyme. 
  5. Add the Brown Butter Cubes and let it roast in the oven for 15 minutes. 
  6. Add one Brown Butter Cube just as soon as it comes out of the oven.
  7. Optional: you can grate parmesan on the roasted asparagus and it’s ready to serve!
