Happy Mother's Day, May today and the days ahead be filled with love, health, play, and happiness. As we navigate these unprecedented times my faith and hope are restored each time I think of all of the mothers in our world. We have navigated the unknown before and are doing it now. Becoming a mother and being a mother is often the great unknown. We don't always know the best next step, but we keep going; finding our way all while loving our families. We are doing that right now as we work, teach, cook, guide, reassure, protect and love our babies. Whether our babies are truly babies or grown adults we are there, finding ways to create a world for them full of understanding, respect and love. My wish for you is the same; may someone mother you the way you mother your babies and if there are times you are overwhelmed and feel alone, please call...reach out through social media...find us and we will answer. We will understand, listen and love. As we take care of one another I want to say thank you to all of the moms out there for being exactly what your family and our Keys community need right now. Recipes and Cooking Fun One-Pan Creamy Bacon, Broccoli and Tomato Pasta INGREDIENTS - 6 slices bacon (Omit to make this recipe vegetarian)
- 4 garlic cloves , minced
- 4 cups water
- 1 cup 10% cream
- 400 g spaghetti
- 2 tbsp butter
- 1/2 tsp salt
- 3 cups small broccoli florets
- 1 pint cherry tomatoes , halved
- 1/2 cup grated Parmesan
INSTRUCTIONS - Heat a very large non-stick frying pan over medium. Add bacon. Cook until bacon is crisp, 3 to 4 min per side. Transfer bacon to paper towel–lined plate.
- Drain fat from pan, reserving 1 tbsp. Add garlic. Cook for 1 min. Add water, cream, pasta, butter and salt. Boil over medium-high, stirring often, until pasta has absorbed most but not all of the liquid, 10 to 12 min.
- Stir in broccoli, tomatoes and Parmesan. Cook until broccoli is tender, 2 to 3 min. Crumble bacon overtop.
