Summer is here and with it comes the change of seasons. For many of us, this means kids at home from school and more time to spend outdoors. If you are looking for ways to keep your kids entertained and engaged this summer, I encourage you to drop in for our family story time on Friday mornings at 10:30 a.m. or sign-up for our new two-day workshop filled with plant-based lessons and projects.
For the adults, we have an amazing collaboration with Abbott & Wallace Distilling, an award-winning cocktail bar & lounge located only a few blocks from our shop. Learn how to mix delicious cocktails with lavender, mint, and basil and then pot your own herbs to take home and enjoy for months to come. In the meantime, cool off with one of my favorite refreshing cocktails this summer!
Watermelon Mint Cocktail
Mint Simple Syrup
½ cup mint leaves
½ cup sugar
½ cup water
Cocktail
In a small saucepan, simmer water, sugar, and mint leaves for about three minutes until the sugar dissolves. Strain, set aside and let cool before using. Add 1/2 cup of the mint simple syrup and vodka to the pureed watermelon and stir to combine. Assemble the cocktail by filling a glass with ice and adding 1/2 cup of the cocktail mixture. Top with 1/2 cup seltzer and garnish with watermelon cubes and fresh mint.
