We are working on getting ground beef ready for our Ground Beef Special. Rick hasn't given us the official details for the special, so stay tuned to your email for when those are released! We're hoping to have additional details in the next week.

Calves are being born!

This is our favorite time of year because who can't resist a cute baby calf?!

 

Some of our cows are calving this month. The calves will stay with the mama cow until they are weaned (separated from their mothers) in the fall. When they are born, they weigh between 70-100 lbs. When they are weaned, they weigh between 400-600 lbs.

 

We raise the calves as both replacement heifers and feeder cattle. What does that mean? Replacement heifers will be raised to reproduce. They will be added to our beef herd and will have a calf every year. Feeder cattle are fed until they are harvest ready (typically around 18 months of age).

How long can my meat stay in the freezer?

In terms of food safety, meat is safe in the freezer indefinitely as long as the freezer has been maintained at 0° F. However, after a certain period of time, the quality of meat will start to degrade.

Mississippi Pot Roast

Ingredients:

  • 3 lb Chuck Roast (Currently $5.59/lb)

  • 1 packet Ranch Dressing Mix

  • 1 packet Au Jus Gravy Mix

  • 1 Stick Butter - Sliced

  • 4-6 Pepperoncinis (less if don't like spicy)

  • 1/4 c. Pepperoncini Juice or Water

Steps:

  1. Place the chuck roast in your slow cooker. Sprinkle ranch and au jus seasonings over it.

  2. Place butter and pepperoncinis on top.

  3. Pour the pepperoncini juice or water along the bottom of the dish.

  4. Cover and cook on high 4-6 hours or low 8 hours, or until the roast shreds.
