SEPTEMBER'S TINY TIP Garlic contains a powerful antimicrobial called Allicin. During World War II, Russian doctors applied raw garlic to infected wounds. Present research indicates that one milligram of allicin is equivalent to 15 IUs of penicillin, so a dose of 3 cloves has the same antibacterial actions as a standard dose of penicillin. Crushing, chopping, or pressing garlic converts the stored allicin into its bioactive compounds; letting it sit for 10 minutes after chopping, before cooking, preserves the nutrients. |
