I love exploring new places, as well as rediscovering the old. On my latest exploration, we came across a massive herd of buffalo lazily grazing about the hillside on a small island surrounded by salt flats and The Great Salt Lake. They were massive and utterly gorgeous, and we peacefully kept our distance, trying our best not to disturb them. In that moment, I couldn't help but think how incredible life is and the adventurous opportunities that often come our way in ways we never expect. In life, adventures aren't just found in grand exploits; they're often hidden in the smallest moments. Seeking adventure in life is not just about seeking thrills and excitement; it’s about embracing the full spectrum of the human experience—the highs and the lows, the triumphs and the struggles. It’s about finding beauty and meaning in the most unexpected places and allowing ourselves to be fully present in each moment, no matter how small. Easter Nominations— A Note of Gratitude Friends, my heart is so full as I write this. Last month, I asked for nominations of a friend or family that could use a little extra love over Easter weekend. I was blown away by the beautiful nominations that came through. The selfless love poured out toward your special loved one was absolutely beautiful. It was impossible to choose just a few, so we selected all of them–even the three located out of state. Cookie kits were delivered in three different states, plus 175+ miles of making deliveries over two days within Riverside and Orange County. I love finding ways to add extra protein into my baking, especially for my kiddos. I recently discovered Nuzest, a plant-based protein powder, and I loved how clean the ingredients were. It is now my go-to for my post-workout shakes. It was only a matter of time until I found a way to create a cookie with it. Hello, chocolate protein roll-out cookies! These cookies are so delicious and kid-approved. Check it out! Yields 12 Cookies 1 C Unsalted Butter 1 C Sugar 2 tsp Pure Vanilla Extract 1 Large Egg 1/4 C Cacao 2 1/2 C Kamut Flour 2 Tbls Nuzest Chocolate Protein Powder 3/4 tsp. Salt 1/4 tsp. Baking Powder Cream the butter and sugar. Add egg and flavoring. Add dry ingredients and mix well. Roll out dough and refrigerate for 1-2 hrs. Cut out into desired shapes and bake at 375 for 10-12 minutes. Royal icing: Add butter vanilla to your unflavored royal icing. Happy baking! |
