Marcia’s Nutrition Corner Hello! I am the Holistic Nutritionist at Think. I have had the pleasure of meeting many of you when I am in the office each week. I am available for 15 minute complementary consultations for you to ask questions and see how I am able to help you with your health and nutrition goals. As a Holistic Nutritionist, I look at lifestyle as well as the nutritional component, to help determine the root cause of dis-ease within the body. As summer is upon us and berries are ripe for picking, I thought I would include a jam recipe that contains very little sugar - Yes it still tastes great!! I picked my berries at Uncle Scott’s farm on Appleby Line, but you can use any berries from the store or local farmers market. This works best when they are frozen first. Chia seeds are packed with fibre, iron, calcium, as well as an excellent source of omega 3 fatty acids, which helps regulate cholesterol levels. Berry Chia Seed Jam Ingredients: 3 to 4 cups frozen berries: mix or just one of strawberries, raspberries, pitted sweet cherries, or blueberries 1/4 cup pure maple syrup, or to taste (I used less) Dash of fine sea salt 2 Tbsp chia seeds 1 tsp pure vanilla extract - In a medium pot, stir together the berries, maple syrup and salt until combined. Bring to a simmer over medium-high heat and cook for 5 to 7 minutes, until the berries have softened. They will release a lot of liquid during this time.
- Reduce the heat to medium and carefully mash the berries with a potato masher until mostly smooth. The jam will still look very watery at this point, but that’s okay!
- Add the chia seeds and stir until combined. Simmer over low-medium heat, stirring frequently, for 8 to15 minutes. Reduce heat to avoid sticking if necessary. The liquid will cook off and the mixture will thicken slightly.
- Remove from the heat and stir in the vanilla extract and lemon juice. Transfer the mixture to a bowl and refrigerate, uncovered, until cool. Store in an air tight container in the fridge for up to 2 weeks. It freezes well for 1 to 2 months, if it lasts that long!
- I use this jam on my smoothie bowls, muffins, topping on fresh berries with coconut whipped cream and spread on crackers topped with pear.

VACATION SCHEDULES The summer hours are upon us and there are vacations being had by many. We want to ensure that we let you know what we have going on at the office. To that end let me advise you as to when your care provider may be out of the office: Dr. Rodney Kirk: out of the office from the end of clinic on Friday, July 28th returning to regular clinic hours on Tuesday, August 08th at 3:00 p.m. Patients who require chiropractic care while Dr. Kirk is out of the office are asked to call and arrange to see Dr. Hayward during her clinic hours in his absence. Rhonda Sparks: out of the office from the end of clinic on Friday, July 14th returning to regular clinic hours on Monday, July 24th at 12:30 p.m. Rhonda is also out of the office from the end of clinic on Wednesday, August 02nd returning to regular clinic hours on Monday, August 14th. Dr. Erika Ristok: out of the office from the end of clinic on Friday, June 30 returning for regular clinic hours on Thursday, July 20th. She is also out of the office from the end of clinic on Friday, August 04th returning to the office on Thursday, August 17th. |

Our office would not run as efficiently as it does without the amazing support staff that we have been able to secure over the years. Most all of you have had the chance to meet incomparable Luanne (see above) and, over the years, you may have had the chance to meet Emma Kirk too. Now Emma has joined us to help ensure that all runs smoothly here for you. We do what we can to keep our web site current with the goings-on in our office. We have recently added a series of pictures and videos about the physical changes taking place within our four walls (click here to see those) with more promised to come soon as we have removed the temporary panel wall and replaced it with a moveable wall to allow us to create a large, open space wherein we can run meditation classes, seminars and more! I have also added more exercise videos to our web site to illustrate some of the basic stretching techniques our chiropractors and registered massage therapist recommend to their patients.
