Our last month's newsletter featured the ingredient tempeh, a delicious plant-based protein that is made from fermented soy, giving it a slightly nutty flavor and a firm texture. You’ll find tempeh in the refrigerated section of your grocery store, usually near the tofu. Before cooking with tempeh you’ll want to steam it for 10-12 minutes to remove bitterness and soften it to absorb the other flavors in your cooking. Then you're ready to go! |

WEB RESOURCE REVIEW: Consumer guides to buying "clean" produce Rodale Institute recently recommended a new Consumer Reports analysis giving "produce ratings" to identify which produce poses the biggest risk from pesticides. They looked at 35 fruits and vegetables -- organic and non-organic; US-grown and imported. They based their recommendations on five years of data that the Department of Agriculture collected from tests on fruits and vegetables to detect about 450 pesticides. Another source of information: Every spring, the Environmental Working Group (EWG) publishes an updated Shopper's Guide to Pesticides in Produce, better known as the Dirty Dozen and Clean Fifteen. The guide aims to help consumers avoid fruits and vegetables that contain high concentrations of pesticides while saving money in the produce aisle.
