Karen Shrum, Oncology Nutrition Consultant A note from Karen Shrum: "Since starting with Remission Nutrition in 2020, I’ve continued my education with oncology nutrition and nutrition genomics. Completing the basic nutrigenomic training with Nutrition Genome allows me to share with clients what genes may impact bodily functions like digestion, metabolism, detoxification and hormones and how nutrition and lifestyle can affect genetic expression. I also completed the Oncology Nutrition Institute’s 250-hour certification program and am honored to officially be an Oncology Nutrition Consultant (ONC). To date, I have supported and provided nutritional guidance to more than 100 clients and feel blessed to be part my clients’ care teams. Through my training and consulting, I often make the analogy of our bodies resembling a Jenga game. Over time, when enough pieces are pulled out, the structure becomes weak and falls. The Terrain approach is about rebalancing your body to fortify and strengthen your structure. This whole-person, whole-food concept is the foundation for health, supporting and enhancing treatments, quality of life and positive change. Oncology Nutrition Consulting has provided many common conversations around lowering toxic burden and stress levels, restoring metabolic health and rebalancing hormones. . When I’m not consulting for Remission Nutrition, I’m busy being a mom of two teenage girls, both currently active in competitive fall sports. As a family, we enjoy camping, traveling, playing volleyball and cooking together. Speaking of fall, enjoying foods that are in season, is a great way to consume nutrient-dense foods and meal plan. For instance, the fall is the best time to consume beef that was raised on grass as they have spent all summer turning nutrients from their natural diet into healthy fat to prepare for winter. Brussel sprouts, broccoli and cabbage are also in season in the fall and cruciferous veggies help us to detoxify, rebalance hormones and offer anti-cancer phytonutrients." Eat to Live! Karen | | |

Carrie Procinsky, Oncology Nutrition Consultant Some words from Carrie: "Fall has always been my favorite time of year. The leaves turn colors, and the air has a chill while the sun still glows warmly in the afternoon. Thinking back, I can still smell my mom’s apple crisp baking in the oven. I have fond memories of growing up in Canada. While Houston doesn’t quite have the same ambiance, it has a lot of unique perks as well – keto apple crisp, Friendsgiving (in place of Canadian Thanksgiving), and a few leaves changing colors out in Hill Country. The relief of the weather from insane hot to just hot is also a bonus. Fall reminds me of a fresh start, which may be from all the years of school that I seem to continue to load up on myself (I am a total sucker for anything nutrition education related). But it just feels like a time of rebirth for me. I get to see my kids off to school, and it is time for me to get back to me and get ready for my school term to begin. My favorite thing to do to start my day after the crazy hustle and bustle of school mornings is to take my dog for a walk by the Bayou. It is fun to watch the world through her nose, walk and laugh with my favorite friends, listen to a podcast (nutrition related, of course) or listen and watch for birds. During the last year and a half, I have worked as the Client Relations Manager for Remission Nutrition and as my studies with Oncology Nutrition Institute came to a close, it was time to pass the torch to amazing Anna and step into the role as Remission Nutrition’s newest Oncology Nutrition Consultant. It is an incredible honor to be involved in oncology nutrition which has been a dream of mine for years. Baked Wild Caught Salmon Salad with Chive Ranch Dressing Please choose Organic! Serves: 6 Dressing: ¼ cup of plain unsweetened nut milk ½ cup of avocado mayonnaise 3 Tbsp olive oil 1 Tbsp lemon juice 1 Tbsp of fresh minced dill 1 garlic clove minced 2 Tbsp chopped chives Sea salt and black pepper to taste Salmon: 1lb Wild Caught Alaskan Salmon ¾ tsp garlic powder ¾ tsp Dr. Cowan's Garden leek powder ¾ tsp smoked paprika ¾ tsp sea salt 1/8 tsp black pepper |

Instructions: 1. For the dressing - Whisk together the nut milk, avocado mayo, oil, lemon juice and dill until smooth. Stir in garlic and chives and season to taste with salt and pepper. 2. For the salmon – pat dry. In a small bowl mix all seasonings. Pour seasonings all over salmon and cook in oven at 270 degrees for 20-30 minutes. When the salmon is done, let it cool. 3. For salad – assemble lettuce, tomatoes, capers, avocados and red onion. Place salmon on top. Drizzle desired amount of dressing on salad and mix well. |
