We are pleased to announce a new upcoming project that we are going to be launching in July, Spoonie Meal Saturday! One Saturday of each month we will be going live on Instagram to bring you a virtual cook-along of a delicious meal meant for spoonies. These quick and easy meals can be altered to meet specific dietary restrictions and will be perfect for making on those days where you're low on spoons but don't want to sacrifice tastiness! We will be posting the recipe, accessibility requirements, and possible substitutions you might use for the meal each month in our newsletter. That way you have time to get your ingredients so you can cook right along with us if you would like to! These videos will be saved on our social media pages if you weren't able to come to the instagram live or if you want to cook the meal again! We encourage you to submit your own “spoonie meal” recipes that you love to kelsey.calimer@fightlikeawarrior.org to help us build up this excellent resource for all others living with a chronic illness or disability and for the chance for us to make it in our cook-along! These can be recipes you have created yourself or ones you have found elsewhere and have grown to love! The first every Spoonie Meal Saturday will take place on: JULY, 24th @ 7:00pm EST/4:00pm PST
We will be making: Grilled Chicken and Asparagus Pesto Pasta The Ingredients you will need are: - 2 boneless skinless chicken breasts or vegan meat substitute/no meat - 1 teaspoon Italian seasoning - 1 pound asparagus, woody ends cut off - Olive oil, kosher salt and black pepper to taste - 12 ounces rotini pasta or gluten free pasta - 1/3 cup pesto - 1/2 of a lemon, juiced - 3 tablespoons shredded Pecorino Romano or parmesan cheese or vegan cheese substitute - 2 tablespoons toasted pine nuts - Fresh chopped basil and more Pecorino Romano for garnish Accessible prep: If you have trouble holding or using knives/other tools, please purchase pre-squeezed lemon juice, pre-cut asparagus and pre-shredded cheese. You can also purchase pre-cooked meat. This recipe can be modified to be vegan or gluten free. |

June is #ScoliosisAwarenessMonth and we are excited to share Izzy’s (@scoliosis_warrior_2019) story with you! “Hi, my name is Izzy and I underwent spinal fusion surgery in 2019 to correct my severe scoliosis. My scoliosis journey has been long and difficult, but through it all I have learned so much about life and myself that I wouldn’t change it for the world! I was first diagnosed at age 5 with a 24 degree thoracic curve. I was immediately braced. Bracing is extremely difficult to tolerate, not to mention socially awkward! In 2019 at my routine x-ray appointment we found out my curve increased to 60 degrees in just 5 months! We were shocked and surgery was recommended. Others were very negative to me about having surgery, telling me I’d never play sports again, never dance again…they told me so many “nevers”…I was scared. But mostly I was determined to prove them wrong. Surgery recovery was the most difficult thing I’ve ever done in my life. It was physically and mentally challenging. There were times I didn’t know if I’d ever be “normal” again or if I’d be able to play the sports I love again. I’m now 2 years post op and back to all my sports and activities that I love. I had to fight like a warrior to get here though. Everyday I had to set goals and do whatever it took to achieve them. My path was difficult and overwhelming at times. But we can do hard things when we set our minds to them. Fighting like a warrior is a mindset, you have to believe in yourself and with that anything is possible! |
