Highland Maple Brisket

  • 3-4 lb Highland brisket
  • 1 bottle beer
  • 1 can tomatoes with green chilies (medium)
  • 1/3 c. maple syrup
  • 1 large sliced onion
  • Salt and pepper 

 

Brown Brisket in heavy skillet 5 minutes/side on med-high heat. Add all other ingredients to Crock Pot. Put in brisket, turn on crock pot 8 hours low, or 2 hours high and 5-6 hours low. Enjoy!

Ranch Update

As we write this newsletter we are getting some well needed rain.  This rain is so needed to help grow some forage.  The beef weights have been running on the small size this year due to the droughts so we hope this rain will help.  

 

Spring calving season is all done.  Our next calves are expected in the fall. 

 

Ground Beef

For our customers we have ground beef available.  We retired a Highland cow and had an Angus hybrid steer that did not meet our quality standards for cuts so the whole steer was ground.  The one pound package is $7 and the 1.5 pound package is $10.   Please let us know what you would like.  We make deliveries to the Phoenix and Tucson areas once a month.

Beef

The next available harvest date for beef is May 21.  Your beef will hang for 14 days and be cut, wrapped and be ready for you after June 10.  There is a quarter beef available and this will be gorgeous local Brangus.  These boys have been relaxing in the feed pen since Thanksgiving and are looking great. 

 

Highland beef continues to be sold out but if you are interested please let us know and we will put you on the wait list.  We have had some changes and have been able to fulfill some wait list requests.  

 

Our butcher is taking a well deserved vacation and will be closed June and July so the next date after May will be August.  Get your reservation in now.
