As Easter draws near, our focus turns to the core of our Christian faith—the death and resurrection of Jesus Christ. This season prompts us to pause, reflect, and prioritize the essential aspects of our lives.

 

It's easy to get caught up in our tasks, ambitions, and worries. Yet, Easter calls us to refocus, aligning our priorities with the timeless truths of our faith.

 

At its heart, Easter holds the message of redemption—the selfless love of Christ, who willingly gave His life for us. Reflecting on Good Friday, we confront the weight of our sins and the boundless grace offered through the cross—a love that conquers even death itself.

 

Yet, Easter doesn't end with the cross. The empty tomb demonstrates God's power over sin and death. The resurrection of Jesus is the cornerstone of our faith, assuring our hope and promising new life to all who believe.

 

We're called to embrace what truly matters—to prioritize the eternal over the fleeting, the spiritual over the material. Easter reminds us that real fulfillment isn't found in achievements or possessions but in our relationship with Christ.

 

This Easter, let's reflect on life's deeper significance, setting aside distractions to focus on eternal truths—our bond with God, our love for others, and our commitment to Kingdom values.

 

Let's embrace forgiveness, extending grace as we've received from Christ.

Let's embody compassion, reaching out to others with Christ's love.

Let's cultivate gratitude, recognizing every blessing as a gift from our Heavenly Father.

 

As we celebrate Jesus' resurrection, may we grasp the preciousness of life and live it with purpose and passion. Inspired by His victory, may we live in the light of eternity, secure in our hope. And with grateful hearts, may we cherish the important things that give life its true worth.

Here's a healthy and delicious recipe for a Spring Vegetable Frittata, perfect for Easter brunch

or any time you want a nutritious meal.

 

Spring Vegetable Frittata

 

Ingredients:

8 large eggs

1/4 cup milk (you can use dairy or plant-based milk)

1 tablespoon olive oil

1 small red onion, thinly sliced

1 cup asparagus, chopped into 1-inch pieces

1 cup cherry tomatoes, halved

1 cup baby spinach leaves

1/2 cup feta cheese, crumbled (optional)

Salt and pepper to taste

Fresh herbs for garnish (such as parsley or chives)

 

Instructions:

Preheat your oven to 375°F (190°C).

 

In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.

 

Heat olive oil in an oven-safe skillet over medium heat. Add the sliced red onion and cook until softened, about 3-4 minutes.

 

Add the chopped asparagus to the skillet and cook for another 2-3 minutes until it begins to soften.

 

Add the cherry tomatoes and baby spinach to the skillet, and cook for another 1-2 minutes until the spinach wilts slightly.

 

Spread the vegetables evenly in the skillet and pour the egg mixture over them, making sure the vegetables are evenly distributed.

 

Allow the frittata to cook undisturbed for 2-3 minutes,

until the edges start to set.

 

Sprinkle crumbled feta cheese evenly over the top of the frittata if desired.

 

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set in the center and slightly golden on top.

 

Once cooked, remove the skillet from the oven and let the frittata cool for a few minutes before slicing.

 

Garnish with fresh herbs and serve warm.
