Jalapeno Taste Buds Tacos

1# ground beef

12 corn tortillas

6 med jalapenos

3 slices of bacon - cooked until crisp and crumbled

1 pkg Lawry’s All Seasoning

8 oz. Cheddar cheese, grated

1 oz. cilantro, chopped

2 tbl sour cream

8 oz. cream cheese, room temperature

1 tbl paprika

1 tsp ground pepper

1 tsp vegetable oil

 

Recommended toppings

Sour cream

Guacamole

Pineapple Salsa

Lime

 

Directions:

1. Preheat grill to medium-low heat. Cut jalapenos in half, lengthwise, and remove stem and seeds

Place jalapenos on the grill, skin sides down to char the outside. Once charred, remove from heat and set aside.

2. In a skillet, over medium heat, cook meat until done. Add paprika, Lawry’s and ground pepper to meat, mix well and continue to cook until the meat has browned, approximately 5-7 minutes total. Set seasoned meat aside.

3. Mix the cream cheese, cheddar cheese, sour cream together. Scoop out cheese mixture and stuff into jalapeno sides. Place back on the grill to melt the cheese. A griddle or pan may used. Set aside.

4. Heat the tortillas, one at a time.  Place a jalapeno with melted cheese on each warm tortilla, top with cooked ground meat, bacon and topping of your choice.

5. Enjoy! Makes 12 tacos

 

Pineapple Salsa

 

4 medium tomatoes - diced

1/2 large pineapple - diced (you can substitute 1 1/2 20 oz cans of pineapple slices, but fresh is better)

1 red onion - diced

2 jalapenos – seeded and diced

1 cup cilantro, chopped

1 teaspoon salt

1/4 cup of lime juice

 

Directions:

1. Add tomato, pineapple, onion cilantro and jalapeno to a bowl and stir to mix.

2. Add salt and lime juice to the mixture and stir to mix.

3. Place mixture in the refrigerator overnight

Gila County 4H Beef Cook off winner

This month's recipe is the winner of the Gila County 4H beef cook off.  Each year there is a county-wide competition as the 4H youth prepare their favorite beef recipe.  Sitting in the 4H leader meeting where the cook off planning was discussed I could not believe my ears that the ground beef for the competition was going to purchased from WalMart.  Yikes!  We could not allow that to happen. Gryphon Ranch stepped us and donated all the beef for the competition and to feed the judges. We asked if we could publish the winning recipes so this is the first one  We were so honored to support the local 4H youth.  We hope you enjoy their winning recipe.

Beef

The next available harvest date for beef is August 13.  Your beef will hang for 14 days and be cut, wrapped and be ready for you after September 3.  Our butcher is taking a well deserved break.  We will continue to harvest through fall.  Please let us know your needs.  

 

Highland beef continues to be sold out until 2023 but if you are interested please let us know and we will put you on the wait list.  We have had some changes and have been able to fulfill some wait list requests.

 

Ground Beef

For our customers we have ground beef available.  We had an Angus hybrid steer that did not meet our quality standards for cuts so the whole steer was ground.  The one pound package is $7 and the 1.5 pound package is $10.   Please let us know what you would like.  We make deliveries to the Phoenix and Tucson areas once a month.  if you meet us on one of these routes then there is no delivery charge.
