Trader Joe's Cauliflower Gnocchi (12oz bag) (Vegan) From Cathy: You can prepare the gnocchi in a variety of ways - pan fry, boil, air fry or microwave. I pan fried in the photo below. To serve, I top the gnocchi with onions sauteed in Smart Balance, a dairy-free substitute, and shredded parmesan cheese. It would be easy to make the dish entirely vegan, if you prefer. Add a salad or a green veg, and dinner is ready! |

Spaghetti Squash with Vegan Pesto and Tofu From Susan: I make an easy meal with spaghetti squash, vegan pesto and tofu. I roast the squash in the oven, top with the pesto and stir in tofu cut into small cubes. Voila! |

Barilla Chickpea Pasta with Trader Joe’s Vegan Bolognese Pasta Sauce and Veggies From Jan: Tonight I’m making chickpea pasta with vegan bolognese and a medley of frozen veggies. Dinner will be quick, healthy and delicious! |

Thai Kitchen Red Curry Paste (available at Whole Foods & Sudbury Farms) From Eileen: My family loves Thai curry. I make an easy curry by sautéing some veggies and adding coconut milk and Thai Kitchen Red Curry Paste (thinned with a little water) for the sauce. Almost any combination of veggies will work - onions, garlic, carrots, broccoli, peppers, sweet potatoes, spinach, etc. I add chickpeas for protein and throw in some cashews if we have them. Serve over couscous or rice, with yogurt on the side, if you like. |

Trader Joe’s Vegetable Masala Burgers From Karen: I try every new veggie burger I see, but the Masala burger remains my favorite. These patties are potato based and infused with Indian spices. You can pan fry them on the stove in a little oil or skip the oil and grill them. |

I use a small Foreman grill, and they come out looking just like the picture on the box–just minutes from freezer to plate! Serve as a burger on a bun topped with chutney, tomato, pickles, etc. or serve as a side with applesauce. Available in the veggie burger section of the freezer. |
