Heyyyy! Welcome back or welcome for the first time. My regular subscribers know that I missed sending out a newsletter in August - and I’m sorry! Life got crazy busy when I agreed to teach again. So I am now teaching Humanities (English and History combined) for grades 5-8. I’m rather busy with that. But not too busy for you!

 

So first, let me reiterate that I never sell, nor trade, nor barter your information. I respect you as much as I hope you respect me.

What We’re Up To

Second, here’s what’s up with my writing: As I write this I am choosing an illustrator for my Growing Up As Fairies story. Also, copies have been going out to my beta readers. This will lead to another set of edits and then hopefully a publish date. Please let me know if you are interested in being an ARC (Advanced Reader Copy) reviewer. This means you receive an advanced copy to review. This also means that you understand that there may be some more small changes to the book before I “really” publish it. You receive a complimentary copy of the book in exchange for your honest review on Amazon, Goodreads, social media, etc. I LOVE doing ARC reviews for others. It’s pretty sweet to read new books for free, plus being an elite group of advanced readers to a new book.

 

Third, I bit the bullet and did a video interview. Azrielle Lawless is absolutely Amazing (check out her stories - they're so much fun!) and put me at ease almost immediately. Then we spent an hour chatting and laughing. Plus, I learned a new phrase! Seriously though, watch my first online interview - YouTube no less- On HellaVella!

 

I also have my two children’s stories, my two nonfiction series, and my two adult fantasy romance series on Kindle Vella. I’ve been a little haphazard updating The Summer House and the Homestead Recipes, but Through the Gate has been receiving regular updates. My “new” website was created this summer and I'm afraid I haven’t updated it recently. It’s on my list of things to do, I promise! Meanwhile, please check it out and let me know what you think, I would love to know how to improve it!

It Feels Like Fall

We’re coming into fall and that seems like a lovely time to curl up with a book or my computer and enjoy a glass of red wine and a steaming bowl of soup. Corn Chowder is one of my favorites because it uses up leftovers and is just so easy, not to mention yummy. Definitely go for the cream though instead of milk, it makes a HUGE difference! This is one of the many recipes you can find in my recipe book - easy yet yummy. I don’t have time to spend hours in the kitchen each week. Corn Chowder

Due to the cream, the soup may separate when frozen. Try to make what you can eat in a day or two or mix really well after thawing and heating. This is a soup we enjoy often in the fall and winter.

 

Ingredients

2c of broth (vegetable or chicken both work well)

Onion

1-2c cubed Potato

1c Corn

Other veggies as you like (I have successfully added broccoli, mushrooms, shredded carrots, and celery)

½c leftover ham cubed or a few pieces of leftover bacon crumbled

3-4T butter

1-2c milk or cream

Salt and pepper as desired

Dried parsley if desired

 

  1. Saute your diced onion and any other crisp vegetables (carrots, celery, etc). Then dump in crockpot. (You can skip the sauteing, but it tastes just a little better if you complete this step.)

  2. Add potatoes. You can also use some leftover mashed potatoes if you like.  

  3. Add any other vegetables.

  4. Add pork then broth.

  5. Salt and pepper to taste, then add butter.

  6. Cook for several hours until potatoes are tender. 

  7. About 10-20 minutes before you will serve, add milk or cream. I use light cream. 

  8. Check seasoning. Serve once the soup is hot again after adding the cream.
