Mornin'!

Whatta weekend it was! I am incredibly bummed that it's over, but we must keep on grinding, am I right? My weekend was spent reading, lounging, meal prepping, and spending time with my husband and step-daughter. On Sunday, we went to church, then made a quick trip to Barnes and Noble and Trader Joe's. These are simple things but they really do give me the R+R I crave at the end of every long work week.

Trotting along in the last year of my twenties (!!!) has actually not been a trot at all--more of a jog/sprint with some crying here and there and A LOT of realizing that life is just going to get harder. The silver lining, however, is what makes it all worth it: I get to trust in the one true God who created me to live out this life for him. Financial planning is difficult but house hunting is SO fun; thinking about having kids is incredibly daunting, but picturing those little faces, a perfect mixture of me and my husband, makes it a little less intimidating. These are things I am approaching with anticipation, while trying to enjoy the "just the two of us" phase of life Hector and I are living. I'm learning to solely rely on God for ALL of the things I cannot control, which is most of what I am looking forward to. All I can do is diligently seek him and trust Him with our future. What better person to lean on than the Creator? I can't think of anyone else at all. Praise God for that!

Whip This Up:

Here is my super easy recipe for a healthyish, but yummy, kale salad (I personally love eating this in the summer time, preferably at the beach or by a pool. Weird, yes, but you won't bloat!):

 

Makes one salad bowl size + the perfect combo of sweet and salty-- 

 

- 2 handfuls of kale

- 1 1/2 cups of chopped red grapes

- 1 handful of sunflower seeds (no shells, please)

- 1 handful of pine nuts

- Drizzle some of the Trader Joe's Fig + Balsamic vinaigrette (or any dressing equal to that)

- Top with shredded parmesan (I like it straight from the cheese block but pre-shredded is fine)

- Mix a few times and VOILA, you've got a healthy, filling, delicious salad!
