Ingredient of the month: Tempeh Want to try something new on your meatless Mondays? Tempeh is a delicious plant-based protein that originated in Indonesia. Like tofu, tempeh is made from soy, but the soy in tempeh is fermented, giving it a slightly nutty flavor and a firm texture. Tempeh is a nutritional powerhouse: a three-ounce serving has 15 grams of protein and a variety of vitamins and minerals, including calcium and iron. Tempeh makes a tasty and versatile meat substitute. You can bake, grill, sauté or stir-fry it, and it’s especially good marinated. Before cooking with tempeh you’ll want to steam it for 10 - 12 minutes to remove bitterness and soften it to absorb the other flavors in your cooking. |

Here’s a basic tempeh recipe from Minimalist Baker, one of our favorite cooking websites, to get you started: Marinated Peanut Tempeh (7 Ingredients). The recipe calls for you to bake the tempeh, but you can also put it on foil and grill it outside. Serve with grilled veggies or any of your family’s favorite sides. | | |

Ready to go? You’ll find tempeh in the refrigerated section of your grocery store, usually near the tofu. It sometimes comes with added flax seeds or a grain mixed in. - Please help! Due to the pandemic, the Needham Community Council Food Pantry has had a 72% increase in the number of people they are serving. They are unable to accepts dropped-off food, but you can donate online or take a look at their Amazon wish list.

WEB RESOURCE REVIEW: By Alexandra Diener Minimalist Baker is a website that focuses on simplicity in cooking. The website features recipes that are either under 30 minutes prep time, use one bowl, or contain 10 or less ingredients. The website is very user-friendly, with clear directions and easy ways to search for recipes based on specific criteria (such as gluten-free or dairy-free recipes, a certain type of international cuisine, seasonal recipes, etc.). Most of the ingredients are accessible, but there will be some unusual ingredients (such as avocado oil) in the recipes. However, the recipes usually offer substitutions. Minimalist Baker has a wide range of recipes and does not have a particular focus, so you can find dessert recipes and healthy snack recipes. Many of the recipe pages not only have directions, but a video as well for people who like visuals. |
