INGREDIENT OF THE MONTH: Extra Firm Tofu — let's give it a chance! Do you love tofu? Hate it? Avoid it? Fall somewhere in between? Tofu, sometimes called bean curd, is a soybean product that is a good source of protein and calcium, as well as other nutrients. It comes in 4 versions: silken, soft, firm, and extra firm, and is readily available at most grocery stores in the refrigerated section — at Sudbury Farms you'll find it in the produce section at the opposite end from the mushroom display. Its mild taste and soft consistency make tofu versatile, but also unfamiliar to many people's palates. For those tofu-avoiders or tofu-skeptics, Crispy Tofu is an excellent place to start. |

The secret to crispy tofu is simply to use extra firm tofu and remove the moisture and add some spice before sautéing. You can use a tofu press (look online and check local stores) or you can wrap the tofu in a towel and "sandwich" it between 2 cutting boards with heavy books or an iron skillet on top for 15-30 minutes. The Mass. Sierra Club offers free plant-based cooking classes with vegan chef Diana Goldman. The next cooking class for Our Sustainable Kitchen is scheduled for Tuesday, November 10, at 6:30pm. A Fun, Local Cookbook: A few years ago, First Parish in Needham gathered together some of the members' favorite meatless recipes in a "Meatless is More" online cookbook. You can search the recipes by categories such as appetizer, main dish, soups, dessert, or by ingredient, such as tofu. You might know some of the contributors! |

Needham Farmers Market The regular market season ended last weekend, but MacArthur Farm and The Neighborhood Farm will still be on Garrity Way every Sunday through November until Thanksgiving so you can still shop for produce in the open air! |
