Mālama(Care) Honua(Earth)

Although it is still Winter in Hawai’i, it is considered Spring for all of us here on the East Coast. Spring is an exciting time for all of us as warmer days approach. We celebrate this time of year with Winter behind us and make efforts to spend more time outdoors hiking, barbecuing, gardening, and bike riding. With increased outdoor activity, it is no surprise that increases in outdoor waste (trash) and car travel (air pollution) also increase. Letʻs all pledge to Mālama Honua this day and every day by remembering the three Rʻs:

#1-REDUCE Use less stuff, decrease your consumption and minimize waste.

#2-REUSE Use common materials again for the same purpose or something different.

#3-RECYCLE Collect, process, and sell products made from old materials.

LOCAL-STYLE OXTAIL SOUP

For those who love Oxtail Soup, you’ll know what a “comfort” food this is, especially on a cold winter night! If, however, your keiki (children) are a little skittish when they see the large chunks of oxtail, simply break off some meat and add it to saimin (ramen) noodles in the broth for more “keiki-friendly” eating!

Ingredients

  • 6 lbs. of oxtail, blanched and drained
  • 2 cups raw, shelled peanuts
  • 6 - 8 shiitake mushrooms, soaked and cut in half or thirds
  • 3 star anise prongs
  • 2 tsp Hawaiian salt
  • 1½ inch piece of ginger, smashed plus a few pieces for ginger shoyu
  • 2 - 3 carrots, peeled and cut into chunks
  • 4 quarts water
  • 1 - 2 chicken bouillon cubes

Instructions

  1. Put all ingredients in a pot and bring to boil.
  2. Simmer for 2 ½ to 3 hours.
  3. Use a gravy separator to remove the oil or skim oil off the top.
  4. Add salt to taste.
  5. Optional: Add ¼ cup good whiskey 30 minutes before done.
  6. Use a garlic press to squeeze the juice out of a 1-inch piece of fresh ginger and mix with shoyu. Serve on the side.
  7. Top with green onions or cilantro, to taste.

Note: If you like your peanuts firm or on the crunchier side, add them in the last hour.

Did You Know ...

… that Hawai`i is home to a U.S. National Monument that’s bigger than ALL other U.S. National Parks combined? The Papahānaumokuākea Marine National Monument is a linear band of islands, peaks and cays with coves, coral reefs and submerged banks surrounded by ocean that spans a distance of approximately 1,250 miles. In 2006, George W. Bush established this UNESCO World Heritage site as Marine National Monument, which was expanded by President Barack Obama to include an even larger perimeter of ocean waters. Papahānaumokuākea is more than twice the size of Texas, yet this vast site is seldomly visited because of its remote location northwest of Kaua`i. It actually pre-dates Kaua`i, consisting of the first string of volcanic masses along the hot spot trail.
