What is "JR"?

Every now and again you may see or hear "JR" used at Hansen's. Internally, we use "JR" to distinguish anything being sold directly through Hansen's. It stands for "Julie - Rick", aka the owners of Harry Hansen Meat Service.

Weaning

Our farm is in the town of Norway, and if you drove through the area recently you may have heard a few extra "moo's" coming from our direction.

 

We recently weaned our calves. This means we separated the calves from the mother cows. It takes a couple days for everyone to adjust, so they often moo to one another across the fenceline.

 

We wean calves when they are no longer solely drinking their mother's milk and are getting most of their nutrients from regular feed. Weaning helps them to grow strong and healthy and allows the mother cows to start using the food they eat to nourish their bodies rather than to create milk.

Bruschetta Chicken Bake

We may have cheated for this one... It's not a recipe that has been passed from generation to generation, but it is a favorite from the back of the Stove Top Chicken Stuffing box.

Ingredients:

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 pkg Stove Top Stuffing mix for chicken

  • 1/2 cup water

  • 2 cloves garlic, minced

  • 1 pkg chicken tenders from Hansen's, cut into pieces

  • 1 tsp. dried basil leaves

  • 1 cup shredded mozzarella cheese

     

Steps:

  1. Pre-heat oven to 400° F

  2. Mix tomatoes, stuffing, water and garlic just until stuffing mix is moistened.

  3. Layer chicken, basil and cheese in 3-qt. casserole pan sprayed with cooking spray.

  4. Top with stuffing mixture.

  5. Bake 30 minutes or until chicken is done.

      • Average total on whole: $560-$650

      • Average total on half: $280-$325

  • Current beef prices:

    • Split-side (Quarter) - $4.35/dressed weigh lb + $8.75 hide disposal

      • Average total on s/s: $900-$1,050

    • Half - $4.30/dressed weight lb + $17.50 hide disposal

      • Average total on half: $1,650-$1,875

    • Whole - $4.30/dressed weight lb + $35 hide disposal

      • Average total on whole: $3,300-$3,750
