Sammies

This sandwich is perfect to make ahead for the week and the kids will love it too!

Ingredients:

  • 6 eggs

  • 1/2 cup 2% cottage cheese

  • 4 English Muffins ( I use Trader Joe's gluten-free)

  • 4 slices cheese

  • 4 oz. sliced ham or Canadian bacon

  • 4 pork sausage patties (or any meat of your choice)

  • Salt & Pepper

  • Chives, red peppers, spinach, mushrooms, or any other veggies & herbs you prefer

     

Instructions:

  1. Blend eggs, cottage cheese, salt & pepper

    • Preheat your oven to 375.

    • Chop ham, herbs & veggies then add to the egg mixture

  2. Cook egg mixture for 25 min in a parchment-lined 9X9 casserole dish

    • Remove from pan to cool

    • Cut into 4 even squares

  3. Assemble sandwiches with:

    • 1 egg square

    • 1 meat patty

    • 1 slice cheese

  4. Wrap each sandwich and store in the freezer or fridge.

     

Macros (per serving):

  • Calories: 425-475 kcal

  • Protein: 28-30g

  • Carbohydrates: 30-40g

  • Fat: 13-18g

Tips:

  • Defrost in refrigerator the night before you plan to eat

  • For best results: heat in airfryer
