Now at Encore Chocolate & Teas in Olympia Hakalau Chocolates are now for sale at Encore Chocolate & Teas in downtown Olympia! This is really cool because we used to live in Olympia, Washington, and have many dear friends and connections there. So it was particularly sweet to get a website inquiry on possibly carrying our chocolates from Dean, the owner! Early in June, he put all four varieties on his shelves. So if you are in that section of the world, stop in and thank Dean for finding us and inviting Hakalau Chocolate to join his lineup of hundreds of specialty chocolates! |

Mailing is Tricky in Summer Our chocolate is lightly tempered compared to most, due in part to the hand-tempering necessary because we use honey as a sweetener. So it's even trickier to keep it in good shape, mailing from Hawaii, in the summer! In addition to freezing the chocolate overnight, which we always do before mailing (doesn't affect taste or texture), in the summer we add extra insulation, a cooling pack, and it's really best to send it with a 2-day guarantee. Therefore mailing costs are higher in summer; right now we ask that you contact us for an estimate, but watch for that to be built-in on our website shop. |

Here's Dennis, who lives on the farm, and every morning collects fresh banana leaves and turns the fermented beans. Beans are traditionally fermented on banana leaves to utilize the yeast naturally living on the underside of each leaf (leaves in the photo are showing their pale undersides). Dennis absolutely loves the chocolate he helps to make, is always in good spirits, and is a highly valued part of the team! |

Here are Dan and Pat (son-in-law) putting the finishing touches on some new display cases. We provide free koa-wood cases for stores that carry our chocolates! The large logs behind Dan are from a koa tree that washed down into our waterfall pool this winter and will be used for making ferment boxes as well as display cases. Koa is a native, very important tree in Hawaii - also nitrogen-fixing, and one we are planting as a support tree in our new orchard. |
