More and more people are opting for a plant-based Thanksgiving dinner with savory sides, which may become the norm for future Thanksgiving feasts.

Well, for the host of the Thanksgiving feast, there may be a balancing act to please both the plant-based eaters and meat-eaters. Yes, it may be a lot of work but the goal is to limit the meat and enhance those side dishes! Now don't be afraid to break tradition, the Thanksgiving feast is how you create it for your family and friends. The Thanksgiving sides may become your trademark as the best house to attend a Thanksgiving dinner!  And who knows, you may convert some meat-eaters ditching the turkey to the plant-based eaters.

Patti Labelle’s Mac N’ Cheese Recipe

Are you looking for a winner side dish your family and friends will not forget?
Patti Labelle’s Mac N’ Cheese is an easy recipe to follow and your family will be requesting for an encore at the next Thanksgiving dinner

INGREDIENTS

1 tablespoon vegetable oil
1 lb macaroni
8 tablespoons butter
1 tablespoon butter
1⁄2 cup muenster cheese, shredded
1⁄2 cup mild cheddar cheese, shredded

1⁄2 cup sharp cheddar cheese, shredded

 

1⁄2 cup monterey jack cheese, shredded
2 cups half-and-half
8 ounces Velveeta cheese, cubed
2 eggs, lightly beaten
1⁄4 teaspoon seasoning salt
1⁄8 teaspoon fresh ground pepper

DIRECTIONS

  • Preheat oven to 350.
  • Lightly butter a deep 2 1/2 quart baking dish.
  • Fill a large pot with water and bring to a rapid boil.
  • Add macaroni and the 1 TB oil.
  • Cook for 7 minutes, or until somewhat tender.
  • Drain well, and return to the pot.
  • Meanwhile, in a small saucepan, melt 8 TB of the butter.
  • Stir into macaroni.
  • In a large bowl, combine all of the shredded cheeses.
  • To the macaroni, add 1 1/2 cups of shredded cheeses, half and half, the cubed cheese and the eggs, and the seasoned salt and pepper.
  • Transfer to the prepared casserole dish, and top with remaining 1/2 cup shredded cheese.
  • Dot with remaining 1 TB of the butter.
  • Bake for 30-35 minutes or until the edges are golden brown and bubbly.
  • Serve hot.

2021 Self-Check

This past week Kamala Harris became the first women and first Black women to ever hold the office of Vice-President and while shattering the glass ceiling in the process.

 

With the ascent of VP Harris, why not use that moment as inspiration and take stock in ourselves.

Here are a few questions to either get us on track or keep us on track:

 

  • How are our 2021 goals going so far? 
  • What road blocks are in our way stopping us from being the best version of ourselves.
  • What resources do you need to make progress? 

Once you get through that quick self-assessment identify some action steps to keep your momentum going:

 

  • Maybe now is a good time to sit down with your manager and talk about your career path. 
  • Perhaps there are certifications you can pursue that will give a boost to your career.
  • If you are in school, maybe now is a good time to book a session with your counselor and take stock for your academic progress. Counselors are known to have access to a tremendous amount of resources that they can share.
