It’s fall in the mountains which means that the season is coming to an end, but we are so thankful that you joined the Woodfield community. We have a few events planned to round out the season and we are looking forward to seeing you there. We would love to have you join the fun next season! We still have some RV space openings for the 2021 season, but we are filling up fast. Call the RV Office or stop by to reserve your space. The Woodfield Team has sold a record-breaking number of homes, but there are still many beautiful sites still available throughout the Community. A WORD (AND RECIPE) FROM NICOLE |
Here we are…October. As the season draws to an end, I would like to thank each and every one of you for making 2020 a great season. While this season was an unprecedented one, the Woodfield community made it successful, nonetheless. I look forward to seeing you next season! We will get back into the swing of things with holiday celebrations, potlucks, clubs, and my personal favorite, Parade of Homes and Poker Run, along with many other social events. I hope that you all have a great rest of the year and I look forward to seeing you next season. Oh, speaking of season! If you get a chance before your departure, take some time to drive up the mountain toward Greer to see the splendor of the changing seasons on the mountain. The changing of seasons brings a change in my cooking routine. I am a huge fan of soup! My boys are not as fond of it as I am but that does not keep me from whipping some up at least once a week in the cooler months. This recipe is a favorite of mine and thankfully, the boys do not mind it either (as long as it has tortellini in it). |

Slow Cooker Creamy Tomato Basil Soup Ingredients 1 3/4 cup dices carrots (3 medium) 1 3/4 cup diced yellow onion (1 large) 2 Tbsp olive oil 5 cloves minced garlic 3 (28 oz) cans whole tomatoes 1 (32 oz) carton vegetable broth 1/3 cup chopped fresh basil, plus more for garnish 2 bay leaves 1 Tbsp granulated sugar Salt and pepper, to taste 3/4 cup heavy cream Shredded parmesan cheese for serving |
Instructions Heat olive oil in a large skillet over medium-high heat. Add carrots and onion and sauté 3-4 minutes, add garlic and sauté 1 minute longer. Pour mixture into a slow cooker along with tomatoes, vegetable broth, basil, bay leaves and sugar. Stir and season with salt and pepper to taste. Cover slow cooker and cook on low for 6-7 hours or on high for 3 1/2 hours. Remove bay leaves then puree mixture well. I use my blender but an emulsion blender does the trick also. Add puree mixture back into slow cooker and reduce heat to warm, stir in heavy cream. Let soup warm through and serve topped with parmesan cheese and fresh basil. Serve with a nice, crusty garlic bread. Notes - Looking to make this soup a bit heartier? Add refrigerated cheese tortellini or italian sausage (or both!).
- This soup makes great leftovers, but you can most definitly halve the recipe to make less.

WOODFIELD UPDATES & REMINDERS |
- To ensure the renewal of your storage site for the 2021 season, the $30 fee for May 2021 needs to be paid by October 20, 2020. If the site is not paid for by then it will be reassigned to someone on the waiting list. Please contact Penny to pay your renewal deposit.
- If you plan to have Ben Rush winterize your home, please remember to give him a call as soon as possible to get on his schedule. Ben's contact info can be found here.
- If you would like to keep your electric on for the winter season, there will be a $35 per month minimum charge. This will be billed and collected on May 1st for the previous six months. If you turn your electric off there is no cost. We perform routine maintenance to the system over the winter and the power will be turned off intermittently so paying for electric in the winter is not an alternative to winterizing. We still highly recommend winterizing your home.
- The Show Low Senior Patrol offers a home watch program. Stop by the RV office to pick up a registration form to have them look after your home during the winter months. This program operates through the generous donations from the community and donations are used for various programs, outreach activities and uniforms. Please consider donating should you choose to utilize this service.
