Hello my beautiful friend!

 

How are you today? There is a lot going on right now - birthdays, injuries, learning new slang from the kids and the cusp of summer travel, but I have some things to share with you!

You know I love my Trader Joe's snacks. And it has been a minute since I've shared a new one. But here it is: Sour Cream & Onion Rings for President. Or at least for a salad topper, a burger layer or a crunchy snack while I am watching my new favorite Prime Video shows. (Have you seen The Summer I Turned Pretty series or The Joneses movie yet? I highly recommend both! Especially if you need a reprieve from all the murdery, dark, stuff that seems to be all over streaming platforms RN.)

 

Brief on the macros: one serving (of 2.5 in the bag) is: 130 cals/4 protein/16 carb/6 fat. Made from lentils so gluten free as well if that matters to you. The best part? I love to pair them with the Trader Joes yummy jalapeno cauli dip and some veggies for a super easy pre-dinner snack! 

A MOMENT

For the last several weeks I've taken it upon myself to notice my wins. There's a reminder that goes off on my phone each night to make space for this, but of course it doesn't always happen. I do it when I can and lately, 'when I can' has been maybe 3 times a week. Always with some moving water sounds surrounding me. And even with this minimal focus, it has been enormously satisfying - and remarkable - to reflect upon. 

 

It's really small stuff. Like, infinitesimal if I were to make a list of 'what I am thankful for'...yet so abundant in frequency that taking the time to recognize these small wins really has opened my eyes to how much truly is lining up in my world.

 

My wins feel so small that they are almost silly; but they are not nothing! And they all add up - getting the good parking spot, having exact change, finding that ingredient I thought I was out of, running into a friend, a gorgeous sunset...I'm telling you, take some time to recognize these things and they start flooding in with abundance! 

 

There is a theory - some people call it The Law of Attraction, others call it manifestation - that suggests (simplified here) by focusing on something, you can actualize it. And lately, just acknowledging my favorite parts of the day seem to be bringing me more of them! I hope this inspires you too!

WHAT'S NEW?

Did you catch a glimpse of this Easy Buffalo Taco Filling I shared in my  TikTok (via IG stories) this week? I sure did resist, but apparently this trend is not going way.  So despite my penchant for long emails and carousel posts, I'm going to get in on the game the only way I know how...fumbling my way through it. Find me being awkward here. Oh and according to the kids, we were most cringy here.

 

Anything I do post there that I don't share to Instagram (where I can be a little more wordy), I'll expand on in these emails.

 

So here is the easiest, lightest, 'macro-friendliest' thing I've made in a ages!  It takes no time at all and is awesome hot or cold.

 

1lb ground turkey (I used 99%)

1lb riced cauliflower (cooked)

1/2 cup Franks Hot Sauce

1 tsp garlic powder

1 tsp onion powder

1 tbsp ranch seasoning

1 tsp Italian seasoning (optional)

 

Combine the above in a nonstick pan and work around and break apart (I love this meat chopper) until meat is cooked through.

 

Makes 4 servings: 146 cals/28P/4C/1.5F each

 

I love it all mixed in with shredded lettuce, ranch dressing and some blue cheese crumbles. But it's also a perfect base for tacos or layered up in a dip (I'd add refried beans, sour cream, chopped tomatoes, cheddar cheese and green onions then get after it with some chips)!

 

As a final note, this almost-teenaged girl is currently having an MRI. She's in great spirits and luckily mobile enough, but she has zero flexion in her left kneecap. The results will tell us if we are treating a bruised bone or torn cartilage.  This aggressive typing that keeps stirring the cats is my own little therapy as I await the phone call that it's behind her. 

 

Hoping for results soon that give us some good news. We've got lots of travel lined up for our last month of summer and it'll be really hard if she's immobilized or worse - waiting for surgery.

This week - and maybe even until fall - YEET goes the cinnamon (my kids taught me that) and hello jet black cocoa in the bars. Topped with the magic cream cheese frosting it's a new combo that I just can't quit.
