We have been working hard over the last few weeks to bring you a new Origins of Food website.

 

As part of this relaunch we're also announcing our first open-to-the-public Peru Food Program in 2018! See below for dates and more details.

Thinking of joining us in Peru? We'll see these amazing terraces in Pisac, just outside Cusco. Built hundreds of years ago, it is rumored to have taken over 20 years to complete each agricultural level. The stunning Sacred Valley wraps itself around this prominent feature.

In addition to getting some fresh new haircuts this past month, we have been cleaning up some other areas of our lives and have revamped the Origins of Food website. The content remains largely the same, but we have added tons of beautiful new photos and design elements from the last 12 months of traveling and exploring our favorite corners of the world. The major addition to the website content is a brand-new, open-to-the-public, two-part Peru tasting journey. PERU: ANCIENT TO MODERN FLAVORS

A Two Part Tasting Journey

 

Part 1 - Ancient Cusco: May 5 - 13, 2018

 

Our newly announced Peru tour brings you the best of two sides of the Peruvian culinary world: Ancient to Modern Flavors. This trip concentrates on highlighting the incredible flavors, smells and ingredients of Peruvian cuisine spanning from traditional Quechua foods to the highly innovative cuisine of metropolitan Lima.

 

 Ancient Flavors, the first section of the program, will study the origins of Peruvian culinary culture and is based in Cusco and the Sacred Valley. We will meet with farmers who are fighting for their system of indigenous agriculture in a constantly modernizing world. We will explore the vibrant and colorful markets of the high Andes, complete with beef heart skewers, boiled quail eggs and most likely an ingredient or two you have never seen, tried or even heard of before. (Don't eat meat? this program is still highly accessible for vegans and vegetarians alike!).

 

We will also take the journey to Machu Picchu by train and have a complete day to fully examine and enjoy these wondrously mystical ruins. We understand Machu Picchu might be all you have ever wanted to see and your Peru dreams are now complete...

Part 2 - Modern Lima: May 13 - 20, 2018

 

If you have a passion to sip the best Pisco Sours, and a deep craving for the freshest ceviche, join us for the second section of our tour: Modern Flavors.

 

It is on the coast of central Peru, in Lima and south in the regions of Ica and Pisco where we will see how Peru's approach to food has evolved over the years with its growing population and international influences. We will taste how Asian flavors and cooking techniques have crept into Peruvian food and how the drier climates of the coast are perfect for the growth of vineyards which produce a wonderfully drinkable Grappa, or Pisco, as it is known in South America. We will visit Paracas National Park where the desert meets the Pacific and Darwin's favorite blue-footed boobies, seals, sea lions and penguins are prolific. We'll cap off our food extravaganza with a multi-course tasting menu at Central, the World's 5th Best Restaurant.

 

This program can be completed in full, from Cusco to Lima, or you may opt to participate in one of either two sections.

The famous Peruvian ceviche. Only made with the freshest seafood caught the same day, Peruvians make this traditional lunch by cooking the fish in the acid of limes, the heat of aji peppers, and bright cilantro, which produces the most incredible, drool-worthy dish.
