Elderflower tea has a long history of use in German medicine. It has strong antioxidant properties and antiviral effect, which makes elderflower tea quite popular for fighting colds & flu.
I have planted my own Elderberry Tree (Sambucus nigra) in the backyard & after a year this beauty proved to be an asset to our household.
The flowers come on around summer - some people cook with them or make cordial,
I just gathered them in a brown paper bag & dried them.
Then the berries come on in autumn - I collect these & freeze them for later use.
It is important not to eat the berries uncooked, they can be poisonous.
