The winter (s)low down
Winter on the farm is still a hive of activity, with only Hamish and Jessie here getting to fully enjoy little lie-downs in the winter sun!
While Gav and I have been busy catching up with some long overdue farm chores - think upgrading the water infrastructure and extending some sheds - winter is also our time to get experimenting in the distillery.
First up on the research play sheet has been vodka. We've been thinking about making one for a while now and we're super excited to have finally been able to do a few trial runs. It is, of course, a very old school vodka (what else would you expect from us!) and we reckon it's tantalisingly close to being ready. So if you're a vodka lover, keep watching this space!
We've also just put the wheels in motion for our very first whisky! Working with our mates at Longstocking Brewery in beautiful Pambula, we've chosen to use a peated barley as the cornerstone of our mash. What's a mash you might ask? Well, it's basically what you get when you heat ground grain with hot water and the odd enzyme. From that process, we then get a liquid extract (called the wort), which gets fermented to make alcohol (you might know that product as beer!).
Once our "beer" is ready in a couple of weeks time, we'll then start the process of distilling it (many, many times over to increase the alcohol content) until we get what's called "new-make" spirit. That "new-make" spirit will then be placed in barrels here on the farm and in a few years time (minimum three, but possibly up to eight) we should see the results of this winter's efforts! Our very first North of Eden whisky. We'll drink to that!
