I get asked a lot about my favorite recipes. And while I definitely have a short list of predictable ‘go-tos,' there are a few outside my regular orbit that have cemented their place in my top 5 seasonal favorites.

Chicken Enchilada Soup:

 

This recipe didn’t earn the cover page on my first recipe book by accident. The day it came together, I knew I had something special. Finding a way to make this dreamy Mexican soup not only protein and veggie-packed, but thick enough to scoop up with chips or roll up in a flour tortilla, catapulted it to top-tier status. 

 

Favorite way to enjoy: 

 

I love making a ‘soup bar’ where I lay out all the toppings and my family can build their own bowls. I always include: rice, beans, cheese, chips, sour cream and Greek yogurt. This is one of my best tricks to engaging my kids in the meals I make. Customizable options over a ‘base layer,’ suddenly makes everything more fun to eat. Bonus points for ‘dippable’ options. 

Cocoa Bar in a Jar Thin Mint Brownies: 

 

Every day should have a beautiful sunset right? In my perfect eating day, this one is mine. These babies are dense, thick and immeasurably flavorful, yet low in macros thanks to the magic of Cocoa Bar in a Jar. I like thin mint, but use any flavor you have on hand!

 

Favorite way to enjoy:

 

This may sounds nuts, but I actually prefer these brownies after they have rested for a day. They are of course intensely rich and decedent right out of the oven, and totally worth burning your mouth (adding a scoop of ice cream helps negate this), but if you can, hold one 24 hours. The flavors intensify and become even more pronounced and impressive!

Garlicky Spring Vegetable Bake:

 

Don't let the name food you into thinking you need to wait until March to make this. What makes this one special is the combination of intensely flavorful seasonings and cheese, held together by a near calorie-free thickener. That, and its versatility to go from a hearty main dish to lightened up side, simply by eliminating the main protein source.

 

Favorite way to enjoy: 

 

With all the veggie-packed garlicky goodness, I like to serve over top a roasted sweet potato, drizzled in butter and salt to balance out the macros. The result is a savory, simple, satisfying meal that looks beautiful plated in all its colorful glory. It can also come together as a sensational vegetarian side, which I love to have on the table for special occasions. When you replace something like a cheesy hashbrown casserole, there is more room for cake pleaseandthankyou.

Easy Cheesy Turkey Dip:

 

If you’ve ever hosted a party or been asked to bring a dish to pass while trying to manage your macros, you know it can be a slippery slope. For those events and heck, any given Tuesday, I present this dish. It is easy, basic, kid-friendly and has a 100% recipe request rate when brought to any event!! No one will know you showed up with a ‘light dish’ that is guaranteed to stack up against even the richest of sour cream-based dips lining the table!

 

Favorite way to enjoy:

 

You can do so much with this; top it on some shredded lettuce tossed in a mix of salsa and ranch dressing for a one-minute taco salad, fill some corn tortillas, or my family’s favorite, have a utensil free night where you put the pan on the coffee table, turn on the game and get after it using only raw veggies, hearty crackers or toasted cut da carb wrap chips!

5 Ingredient Twice-Baked Acorn Squash:

 

Don’t be fooled by long title of this dish; it could not be simpler to prepare. Couple that with the cost and abundance of squash this time of year, and you can’t go wrong. If you’re looking for a show-stopper of a dinner, this one is perfect; it looks like it came from a restaurant kitchen, but time spent preparing is less than 30 minutes. Just make sure you’ve baked your squash before you set the timer! ;)

 

Favorite way to enjoy:

 

There is almost always leftover filling. I love adding this to an arugula salad or creating a hash with some chopped and broiled delicata squash. My husband scrambles it with his eggs in the morning. Even simpler, combine with some rice or even stuff in baked peppers for a totally repurposed dinner!

Honorable mention goes to: 

 

Pumpkin Mocha Cake! I know I keep teasing about this, and I promise it’s coming to my IG page soon. Made with coconut flour so it's grain free, this ultra-moist cake has all my favorite fall flavors. It also happens to taste dangerously similar to a flourless chocolate torte, all for 100 calories per slice - including the glaze!
