Well, folks, there isn't much to report on this month... APRIL FOOLS! We have been continuously staying busier than ever these last few months. We have been planning our Earth Day event, getting all of our gardens and seeds started, to even beginning some super exciting projects thanks to the help of our amazing partners through Knox County! With the crazy winds that have been going on throughout this breezy March, any food waste that may have been acquired due to power outages are welcome at our community compost site located at the end of West Gambier St. The Community Roots gang is extra excited to be able to grow our team this summer! We are also always looking for help starting seeds for our Farm to School gardens, which distribute food to the Mount Vernon City Schools District and Knox County educational programs. We can set you up to start seeds at home or join us on Wednesday workdays to help us start seeds on site. A few of our board members and volunteers have already begun starting seeds and getting our garden sites prepared for Spring! Join us in the preparation Wednesdays from 3-6 pm! |

TRANSITION-U UPDATE Throughout the month of March, the students at Transition-U have been staying busy helping Community Roots not only with the typical Seed Library stocking, but also learning new gardening methods that soon can be implemented into the garden! Thanks to the generous donations from around the community, Transition-U was able to begin seed starting from plastic, gallon jugs. Plenty of herbs and vegetables have been started with this fun upcycling activity! We eagerly wait for nicer weather so our activities can begin to start outdoors! As much fun as we have in the classroom, we have encountered some challenging learning experiences as we start seeds in their new mini-greenhouse. We all have learned the sensitivity of seedlings and their growing environment. The classroom has learned the importance of airflow, light control, and other environmental factors that are essential to the productivity of our plants. Gardening and growing haven't been the only thing Transition-U has been up to lately. This past month we have been getting ourselves prepared for our Planet Palooza on April 22. Thanks to the help and creative expression of our dedicated volunteers, Transition-U has been getting together prizes to help contribute to our upcoming and exciting event! This month we would like to feature TWO AMAZING groups of volunteers. Both Blasing Landscaping and Kenyon College students have banded together throughout this past month to help Community Roots grow. We truly would not be able to expand at the capacity we have been able to without the hard work of these groups, so THANK YOU Blasing Landscaping and Kenyon College for all of your help! You can use any spring or pearl onion here, or young "regular onions." This is a good side dish either hot or at room temperature.Prep Time: 10 mins Cook Time: 10 mins Total Time: 20 mins Author: Hank Shaw |

Ingredients ▢1/2 pound dozen ramps or pearl onions ▢Salt ▢3 tablespoons olive oil ▢3 tablespoons white wine or sherry vinegar ▢3 tablespoons light-colored honey ▢Black pepper for garnish

If you are using pearl onions, boil them for 5 minutes in very salty water before proceeding. This softens them. Saute the ramps in the olive oil over medium-high heat until they brown, about 5 minutes. Add honey and vinegar and swirl to combine in the pan. Turn the heat down and simmer until the liquid reduces to a glaze, about another 6 to 8 minutes. Serve hot or at room temperature with some fresh black pepper.
