Beef Rib Roast with Chocolate Port Sauce 

  • 1 beef Ribeye Roast Bone in (2-4 ribs)
  • Salt
  • 3 tablespoons freshly grated orange peel
  • 2 tablespoons finely chopped fresh thyme
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon coarse grind black pepper

Chocolate Port Sauce

  • 3 tablespoons butter
  • 3/4 c finely chopped shallots
  • 1 1/2 teaspoons finely chopped fresh thyme
  • 1 1/4 cups port wine
  • 1 can (14 ounces) beef broth
  • 3/4 cup whipping cream
  • 1 tablespoon soy sauce
  • 3/4 ounce bittersweet chocolate finely chopped
  • salt and ground pepper

INSTRUCTIONS

  1. Heat over to 350 degrees.   Combine seasoning ingredients; press evenly onto all surfaces of beef roast
  2. Place roast, fat side up in shallow roasting pan.  Insert ovenproof meat thermometer so tip is centered in the thickest part of the beef not resting in fat or touching bone.  Do not add water or cover.  Roast in 350 oven about 2 hours for medium rare.  
  3. Meanwhile prepare Chocolate Port Sauce.  Melt butter in large nonstick skillet over medium heat.  Add shallots and thyme; cook and stir 4-6 minutes or until shallots are lightly browned.  Add port. Cook 5-7 minutes or until reduced by one half, stirring occasionally.  Add broth, bring to a boil.  Reduce heat to medium, cook 15-17 minutes or until slightly thickened.  stirring occasionally.  Stir in cream and soy sauce.  Cook 3-5 minutes or until slightly thickened, stirring frequently.  Remove from heat.  add chocolate stir until melted.  Season with salt and pepper as desired.  Keep warm
  4. Sauce can be prepared up to 1 day ahead.  Cover and refrigerate. Reheat gently before serving.  Do not boil.

Our objective remains the same - to get the ranch back to operational status.   We were hit with another flash flood on Christmas Eve that we estimated at 8 feet of water.  About 75% of the berms were in place so the barn was fine, but we lost all the water lines, the finishing pen and the corral.  The contractors are currently in here and expect to be wrapped up with their work sometime this week.  Then we have lots of fencing and the corral to rebuild.  We are thankful that we did not lose any animals to the fire or floods and happy that we can do our part to support the other ranchers in the area who lost so much. Once this work is done, we will be able to reopen to visitors. 

 

We were the hit of the Christmas Light parade in Globe.   We tied for first place in the mounted rider class.  The lights were turned off on the Broad Street in Globe and our little cowgirl rode Olympus for the 2-mile course. We got to the end of the parade route and realized we had two choices - to wait for the stock trailer to come to us or walk Olympus back through town to the trailer We went by a big group of motorcycle riders, and we could hear them say "well you don't see that every day" Olympus was the hit of the parade. People were yelling "baby cow" and "what is that?"

Beef update

 

We are currently scheduling November 2022.  We are very pleased that we have been able to secure some purebred pasture raised Angus from a single rancher in Klondyke.   Purebred Angus are quite rare in this area of Arizona and this breeder does a wonderful job with them. He is in his 70's and we really like how he treats his animals and the quality of the beef. 

 

Please let us know your needs.  We understand that things may change but if you think you want beef in 2022 - this is the time to make your reservation.  We only have a few animals not spoken for this year.  We thank everyone for your continued support. 

 

If you need something before November, we have worked with another rancher who raises Brangus, uses our butcher, and may still have availability.   We are very excited that this rancher may also be building a fold of Highland cattle as well.
