Happy Holidays from Meatless Monday Needham! 


For this holiday season we’ve gathered a few plant-forward recipes for sweet treats. These goodies make great gifts and yummy additions to your holiday table. 


What do we mean by plant-forward? Relatively low in animal products like milk, butter, cream and eggs. 


The first three recipes are favorites of the Meatless Monday Needham team. The last two come from Minimalist Baker, a website with lots of great recipes.

Dark Chocolate Bark with Roasted Almonds and Pumpkin Seeds

 

Dark Chocolate is a naturally plant-based food. Unlike milk chocolate and white chocolate, it contains little or no dairy products. 

 

This recipe from Food and Wine is also great with pistachios! 

Spiced Nuts
 

¾ c sugar
1 t cinnamon
½ t cloves
¼ t allspice
¼ t nutmeg
1 egg white, lightly beaten
2 ½ T water
1 heaping c walnut halves
1 heaping c pecans
1 heaping c almonds

Combine the sugar and spices in a large mixing bowl. Stir in the egg white and the water. Add nuts and stir well to coat. Spread the mixture in a single layer on a greased baking sheet. Bake at 275 degrees F for 40 minutes. 


Use a spatula to remove the nuts from the pan. Work quickly, as the nuts will stick to the pan as they cool. If they start to stick before you’re done, pop the pan back in the oven briefly.
 

This recipe is adapted from Broadmeadow School Favorite Recipes, published in 2002.

Apple Crisp

 

Topping:
1 ½ c flour
¾ c brown sugar
¾ c chilled vegan butter
½ c chopped walnuts or pecans

Apple Mixture:

5-6 large apples (such as Cortland)
½ c sugar
1 T cornstarch
⅛ t salt
¼ t cinnamon
⅛ t nutmeg
1 T lemon juice

Mix flour and brown sugar in food processor. Add vegan butter and pulse until blended—pebbly. Add nuts and pulse 3-4 times.

 

Combine apple ingredients and spoon into a baking dish or deep pie pan. Spoon topping over the apple mixture so it covers all of the apples. If you have extra topping you can freeze it. 
 

Bake at 350 degrees F for 50 minutes.


If you prefer, you can put everything in a crust for a crumb-topped pie.

Peanut Butter Fudge

Two Ingredient Dark Chocolate Truffles

This fudge recipe should please the peanut butter lovers in your life! 

This easy recipe requires just two ingredients - dark chocolate and coconut milk. You can add vanilla and a dusting of cocoa powder if you like.
