I wouldn't normally send a newsletter out so soon after the last, but I'm making an exception because... it's British Pie Week 2020! Apparently this week was started in 2007 by a ready-made pastry manufacturer and has been around ever since. And apparently it is now an "awareness week", but I wasn't aware of that.
Interestingly, according to Awareness Days, fish pie follows only cottage pie in the nation's list of favourites. It surprises me that it's the second favourite pie, but then I'm not the greatest fan of it - I think I've had too many badly-made ones.
So what better opportunity to bring out a pie for seafoodies - a fish pie but one that doesn't have the usual mash topping. A fish "pot" pie. It's a great way of using one of our less full-flavoured fish, in this case pollack (but whiting would be good too), that is regularly appearing on the market stall at the moment. And having been derived from a recipe of Delia Smith's and simplified even further, it really is a breeze to make.
