Without question, for me, one of the greatest highlights of the Christmas period is the food. As a family we often enjoy some smoked salmon and shellfish on Christmas Eve or perhaps Boxing Day - lobster, prawns, oysters, for example. Over the past few months I have had the pleasure of collaborating with Charlie of Charlie's Trout and have enjoyed coming up with fun and interesting ways to serve up his produce. Two festive examples are these Smoked Trout Roulades, and a simple-to-make Trout 'Gravadlax' with Dill and Mustard Sauce. |

Two fish species that are keen market visitors in winter are herrings and lemon sole. Alongside them, mussels, which tend to be available from late summer through to late winter, are in their absolute prime in the colder months. Meanwhile I am always minded, in December, that the Dorset (Poole Harbour) clam fishery closes from January until the end of May for stock regeneration, but always seem to get my end-of-season recipes out late.
