| | Summer Snacky Dinners The school calendar may claim that Summer is coming to an end but the weather is holding its ground at hot and humid! Because of this, I have fallen into a bit of a routine (Ok... an obsession) the last few weeks of having Snacky Dinners. I love a good charcuterie board, finger food spread, or sandwich bar. What do I love even more? The leftovers. No stove or oven, no mixing, measuring, or grilling. No heating up the kitchen and minimal cleanup! This may sound overly simplistic. But as an adult it took me a bit of time to recognize the grownup Lunchable-like meal was a perfectly acceptable dinner. Proteins, calcium, fruit, greens, raw veggies. All paired with a glass of something cold and white...even bubbly, if I so choose. Whether I am stocked with leftovers or have shopped all the goodies for myself, there is always a reason to channel the kid in me for a finger food dinner.
