Hunter Browns Brown Butter Is New On The Shelf

Ever wondered what the secret is to chef-style dishes? More often than not, it's about the butter. Browning butter is a common technique used by chefs to add an extra layer of flavour in even the most mundane dishes, but it's a technique often overlooked in home cooking.

We were also happy to make it Vancouver Magazine's Gift Guide for Foodies this past holidays. We've noticed a lot of customers buy our product to give to the foodies in their life and we are so flattered to be seen as worthy of a gift!

Nothing says "I love you" like a thoughtfully chosen condiment. This product won a Made in Vancouver Award this year and at the time we said this: There's a special rung high on the ladder for creators who produce something that heretofore you never knew you needed. Case in point: brown butter cubes.

DID YOU KNOW?


Our Brown Butter Cubes are strategically designed to work with the cook. For instance, when cooking over a stovetop, it is meant to be melted with the speckle-side up so as not to sear the milk solids. This also controls the amount of browning desired, allowing it to be cooked further into black butter (beurre noir), which is the dark mahogany in colour and has a more earthy, coffee-like complexity that verges on bitterness.

RECIPE OF THE MONTH

 

CHEWY BROWN BUTTER AND SPICE COOKIES

The holidays may be over but we can't not share this recipe! Thank you to Kristie Pryor at The Sweet & Simple Kitchen for using our brown butter in her holiday baking. Check out her full blog post here!

INGREDIENTS

 

  • 1 package Hunter Browns Brown Butter Cubes (12 tbsp)
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup fancy molasses
  • 1 large egg
  • 2 tsp vanilla
  • 2 1/4 cup all purpose flour
  • 2 tsp cornstarch
  • 2 tsp baking soda
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 1/8  tsp cloves
  • 1/2 tsp salt

 

  • 1/2 cup granulated sugar (for rolling)
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

 

 

DIRECTIONS

 

  • Preheat your oven to 350 degrees (convection if possible) and line 2 cookie sheets with parchment paper; Set aside.
  • In a large bowl, beat together butter, granulated sugar and brown sugar with an electric mixer until pale and fluffy. Beat in eggs, molasses and vanilla until just combined.
  • In a separate bowl, whisk together flour, cornstarch, baking soda, ginger, nutmeg, cinnamon, cloves and salt. add in three stages to wet ingredients beating on low until well combined.
  • Spoon 1 tbsp of dough out onto prepared baking sheets, fitting 12 to a sheet. Roll dough balls in granulated sugar & spice mixture to completely coat and set back on the baking sheet.
  • Bake in preheated oven for 10-12 minutes or until tops are crackly, edges are golden and beginning to firm to the touch. Remove from oven and allow to cool for at least 10 minutes before serving.
