Coconut Breaded Chicken • 4 Servings
INGREDIENTS •
4 boneless, skinless chicken breasts, cut into 1-inch thick strips
½ cup toasted coconut flakes
½ cup coconut flour
2 egg whites
Coconut oil or spray
Himalayan Pink Sea salt and freshly ground black pepper to taste
PREPARATION
Combine the coconut flakes with the coconut flour in a bowl and season to taste with himalayan pink sea salt and fresh black pepper
Whisk the eggs in another bowl.
Now coat the chicken strips in the egg mixture and then in the coconut mixture before frying them in a frying pan with cocnut oil until golden brown on the exterior and well cooked inside. This can also be made using cooking spray.
