Spinach and Basil Pasta

  • 1 (16 oz.) package bow tie pasta

  • 1 (6 oz.) package spinach leaves

  • 2 cups fresh basil leaves

  • 1/2 cup Basil Olive Oil

  • 3 cloves garlic, minced

  • 4 ounces prosciutto, diced

  • salt and ground black pepper to taste

  • 3/4 cup freshly grated parmesan cheese

 

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook uncovered, stirring occasionally. Cook about 12 minutes. Pasta should be cooked through, but still firm to the bite. Rinse with cool water and drain.

2. Toss the spinach and basil together in a large bowl. 

3. Heat the Basil Olive Oil in a skillet over medium heat. Stir in the garlic and cook for 1 minute. Add the prosciutto and cook 2-3 minutes more.

4. Remove from head and add to the spinach and basil mixture, toss. Add in pasta and retoss. Season with salt and pepper. Sprinkle with Parmesan.
