Coastal or prairie Cajun? A recipe! And more...

DID YOU KNOW...

There's a casual delineation between coastal and prairie Cajun Country? If you follow the Cajun Boudin Trail, you'll be deliciously traversing prairie Cajun Country on both sides of  I-10. (Boudin is Louisiana's famous rice and meat or seafood stuffed sausage.) The lovely photo on the right by Janie Fortenberry shows a prairie Cajun rice field.

 

Then there's the part of Cajun Country that lies closer to the Gulf Coast. This is where you'll find charming towns like  New Iberia, home to Shadows-on-the-Teche Plantation. There's also Delcambre,  the Shrimp Capital of Louisiana - pictured on the left - and of course, Avery Island, where you can tour their Tabasco facilities, 170-acre Jungle Gardens, and so much more.

Either wandering through The Big Easy, touring Louisiana's fascinating swamps, or visiting her historic plantations.

FAVORITE EATERY

Oh boy, anyone who's been to the Bayou State will tell you this is the toughest call to make. I'm going to go old school and choose the legendary Mother's in NOLA.

A LOUISIANA SUMMER RECIPE

 

LOUISIANA COOKIN' is one of my favorite publications. I can't wait to try this dish because I love Corn Maque Choux. Here's a link to the recipe. If you can't find amberjack, here are some possible subsititutes (suggested by me, not the magazine!): Arctic char, Coho salmon, mahimahi, paddlefish, pompano, Sockeye Salmon, wahoo, yellowfin tuna.

Maggie Crozat is back home in bayou country during the most magical time of the year. In Pelican, Louisiana, Christmas is a season of giant bonfires on the levee, zydeco carols, and pots of gumbo. Except, this year, the Grinch has come to stay at the family-run Crozat Plantation B&B. When he floods travel websites with vicious reviews, Maggie thinks she’s identified him as rival businessman Don Baxter. That is, until Baxter's found stabbed to death at Maggie’s workplace... and Maggie and her loved ones become top suspects.

 

The sleigh bells are jingling, and the clock is ticking for Maggie, who must help catch the killer or it will be the opposite of a Joyeux Noël in A Cajun Christmas Killing.
